This cloudy, unfiltered, super funky bottling is a blend of 60% Malvar and 40% Airen, two indigenous Spanish white varieties that were grown organically in the appellation of Castilla La Mancha. Fermented whole cluster with native yeasts in clay amphorae, this was kept on the lees and stems for 6 months and then bottled with very minimal sulfur. This is spicy, herbal and full of character, showing lively passion fruit, pineapple, tangy kombucha and chalky minerals on a broad, enveloping palate.
