This tiny production (210 cases made), organically farmed Mendocino County Cabernet Sauvignon was made by the boutique producer Skylark and shows a gravelly, savory, mineral expression of this classic variety. Restrained in style, fermented with wild yeasts, and bottled unfined and unfiltered, this is taut and grippy with fabulous tannic structure and lovely aromatic notes of black pepper, graphite, black cherry, black currant, and mulberry.
